So… what actually is freeze drying?

Picture your favourite sweets frozen completely solid, then placed inside a special chamber where the air pressure is dropped right down. At that pressure, ice turns directly into water vapour — skipping the liquid stage entirely. What's left is a light, airy, crunchy version of the original sweet with the same shape, colour and flavour — except the flavour is now far more intense because there's no water diluting it. No heat.
