So… what actually is freeze drying?

Picture your favourite sweets frozen completely solid, then placed inside a special chamber where the air pressure is dropped right down. At that pressure, ice turns directly into water vapour — skipping the liquid stage entirely. What's left is a light, airy, crunchy version of the original sweet with the same shape, colour and flavour — except the flavour is now far more intense because there's no water diluting it. No heat. No chemicals. Just physics.

Freeze drying was first developed in the early 1900s to preserve medicines. During World War II the military scaled it up to keep blood plasma stable on the front lines. By the 1960s NASA was using it for Apollo astronaut food — and the famous "astronaut ice cream" was born. It took another 60 years for someone to think: what if we did this to Skittles? Spoiler: it changed everything.

How long do they last?

Do they have the same ingredients and allergens?

Why do they look bigger than the original?

Are they more calories than regular sweets?

What's the best way to store them?
